Choko Loco

The poor choko has a bad reputation as a depression era food in Australia, when it became part of the staple diet. But when my friends were talking about growing them and a Filipina described how she made pancakes with 4 ingredients, I bought some from her at the farmers market and got inspired.. I’ve gone choko loko!

Originally from Central America, the choko or chayote is part of the gourd family and absorbs the flavours you add to it. It has a bunch of useful nutrients. It is high in Vitamin C and folate and has other beneficial vitamins and minerals.

Ingredients

1 choko
1 egg
1 tsp of ginger more if you like
Salt and pepper to taste
Coconut oil for frying

Peel and cut choko in 4 quarters and remove the seed like coring an apple. Grate the choko into a bowl and mix with an egg, ginger, salt and pepper. Fry off in a pan until golden brown. Makes 6 small pancakes for 2 people.
